Mediterranean Baked Fish 🐟🍋🌿
-Ingredients:
- 2 white fish fillets (cod, sea bass, or tilapia)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon 🍋
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and black pepper to taste
- 1 small red onion, finely chopped
- 1 bell pepper (red or yellow), sliced 🌶️
- 1 handful cherry tomatoes, halved 🍅
- Fresh parsley for garnish 🌿
-Instructions:
1. Preheat oven to 200°C (400°F).
2. Place the fish fillets in a baking dish. 3. In a small bowl, combine the olive oil, garlic, lemon juice, oregano, paprika, salt, and pepper. Pour this mixture over the fish.
4. Add the onion, bell pepper, and cherry tomatoes around the fillets.
5. Bake for 18 to 20 minutes, until the fish flakes easily with a fork.
6. Garnish with fresh parsley and serve warm with rice, couscous, or crusty bread. 🥖
