🥗 Ingredients:

  • 300 g pasta (fusilli or any spiral type)

  • 1 cup cherry tomatoes, halved

  • 1 yellow zucchini, thinly sliced

  • 2 tbsp fresh basil, chopped + extra leaves for garnish

  • 3 tbsp extra virgin olive oil

  • Juice of 1 lemon + zest of half a lemon

  • 1 garlic clove, minced

  • Salt and black pepper to taste

  • (Optional) A sprinkle of grated Parmesan cheese


🍴 Preparation Steps:

  1. Cook the pasta in salted boiling water until al dente, then drain and rinse under cold water to cool.

  2. In a large bowl, combine the cherry tomatoes, zucchini, and chopped basil.

  3. In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, salt, and pepper.

  4. Add the cooked pasta to the vegetables, then pour the dressing over and toss well.

  5. Garnish with fresh basil leaves, and optionally sprinkle with Parmesan cheese.

  6. Serve chilled or at room temperature.
