Tagine with Prunes, Almonds, and Eggs tagine 🍖🥚🌰


🍲 Today’s recipe is Tagine with Prunes, Almonds, and Eggs, a luxurious Moroccan dish loved for its perfect balance of sweet and savory flavors.

Ingredients:

Meat pieces (lamb or beef) 🍖

Chopped onion 🧅

Olive oil 🫒

Spices: turmeric ✨, ginger ✨, cinnamon ✨, black pepper ⚫, saffron or yellow food coloring ✨

Water 💧

Dried prunes 🫐

Sugar 🍬

Orange blossom water (optional) 🌸

Blanched and toasted almonds 🌰

Hard-boiled eggs, halved 🥚

Toasted sesame seeds (optional) 🌱

Preparation:

1️⃣ In a tagine or a regular pot, heat olive oil 🫒 and sauté the chopped onion 🧅 until soft.

2️⃣ Add the meat 🍖 and brown it on all sides.

3️⃣ Stir in the spices ✨⚫ so the meat is evenly coated.

4️⃣ Pour in enough water 💧 to almost cover the meat. Bring to a boil, then reduce the heat, cover, and let it simmer for 1.5–2 hours until the meat is tender.

5️⃣ Meanwhile, in a small saucepan, cook the prunes 🫐 with a little water, sugar 🍬, and cinnamon ✨ over low heat. Add a few drops of orange blossom water 🌸 if you like. Cook until the prunes are soft and slightly caramelized.

6️⃣ Once the meat is ready and the sauce has thickened, arrange the meat in the center of the tagine. Surround it with the caramelized prunes 🫐.

7️⃣ Garnish with toasted almonds 🌰 and halved hard-boiled eggs 🥚. Sprinkle sesame seeds 🌱 on top if desired.
