  • 🫘 1 cup cooked chickpeas (plant-based protein source)

  • 🐟 1 can tuna in water (150g), drained

  • 🥒 1 cucumber, diced

  • 🍅 1 large tomato, chopped

  • 🌶️ 1 red bell pepper, chopped

  • 🧅 1/2 red onion, thinly sliced

  • 🌿 A handful of fresh parsley, chopped

  • 🫒 2 tbsp olive oil

  • 🍋 Juice of half a lemon

  • 🧂 Pinch of salt and black pepper to taste

  1. 🥗 In a large bowl, combine chickpeas, tuna, cucumber, tomato, bell pepper, and onion.

  2. 🌿 Add the chopped parsley.

  3. 🫙 In a small cup, whisk together olive oil, lemon juice, salt, and black pepper.

  4. 🍽️ Pour the dressing over the salad and mix well.
