🥗 Vegetable Salad with Chickpeas and Tuna                          (High in Protein):

🥗 Recipe:Salad with Chickpeas and Tuna 


📋 Ingredients:

  • 🫘 1 cup cooked chickpeas (a great plant-based protein source)

  • 🐟 1 can tuna in water (150g), drained

  • 🥒 1 cucumber, diced

  • 🍅 1 large tomato, chopped

  • 🌶️ 1 red bell pepper, chopped

  • 🧅 1/2 red onion, thinly sliced

  • 🌿 A handful of fresh parsley, chopped

  • 🫒 2 tbsp olive oil

  • 🍋 Juice of half a lemon

  • 🧂 Pinch of salt and black pepper, to taste

🥄 Instructions:


  1. In a large bowl, combine chickpeas, tuna, cucumber, tomato, bell pepper, and onion.

  2. Add the chopped parsley 🌿.

  3. In a small cup, whisk together olive oil, lemon juice, salt, and black pepper 🫙.

  4. Pour the dressing over the salad and mix everything well 🍽️.

  5. Serve chilled ❄️. Optionally, garnish with avocado slices 🥑 or a boiled egg 🥚 for extra protein.
