📋 Ingredients:

🫘 1 cup cooked chickpeas (a great plant-based protein source)

🐟 1 can tuna in water (150g), drained

🥒 1 cucumber, diced

🍅 1 large tomato, chopped

🌶️ 1 red bell pepper, chopped

🧅 1/2 red onion, thinly sliced

🌿 A handful of fresh parsley, chopped

🫒 2 tbsp olive oil

🍋 Juice of half a lemon

🧂 Pinch of salt and black pepper, to taste
🥄 Instructions:

In a large bowl, combine chickpeas, tuna, cucumber, tomato, bell pepper, and onion.

Add the chopped parsley 🌿.

In a small cup, whisk together olive oil, lemon juice, salt, and black pepper 🫙.
